A Mathematical Model of the Removal of Milk Protein Deposit

ABSTRACT: Based on a polymer dissolution controlled chemical cleaning mechanism, a mathematical model has been developed to describe the different stages of the removal of milk protein fouling from a hard surface. Various processes, such as reptation, disengagement, mass transfer through the boundary layer and surface area changes during the decay cleaning stage have been taken into account in the modelling process. The successful prediction of the cleaning process under various conditions indicates that the model has proposed a rational mechanism accounting for the removal of milk protein fouling.
